Frosty Watermelon Agua Fresca

For the last weekend of the summer, the heat is back on. Luckily, I still have some watermelon in the fridge. I’ve been getting gigantic watermelons from Costco all summer long. They were so big, it was actually a bit of a challenge to wrestle home and prepare, but the price couldn’t be beat.

Watermelon agua fresca is so simple, a recipe is hardly necessary. And it couldn’t be any easier to make especially if the watermelon is already cut up (I kinda had to cut it up as soon as I got it home otherwise it wouldn’t fit in the fridge).

To make it extra frosty, I froze some of the watermelon pieces. When ready to serve, juice a few cups of chopped chilled watermelon, I don’t bother to strain the pulp. Add a cup of the frozen watermelon pieces and a sweetener if needed, I didn’t as the watermelon was already plenty sweet and blend until smooth.

I’ve made it thicker, more like a slushie with more frozen pieces and I also made it thinner, more like juice with less frozen pieces. Either way, it’s an excellent thirst quencher. Add freshly-squeezed lime juice and/or mint if desired.

Naturally, I got tamales from the farmer’s market to go with the watermelon juice. Alonso Foods makes a variety of items including a delicious vegan vegetable tamale. You can find them at the College of San Mateo farmer’s market Saturday mornings just a few booths over from Sweet Aha!, maker of fine vegan baked goodies. There you go, lunch and dessert in just a few steps.

    I have several tonnes of watermelon in my freezer, chopped up and frozen when the prices were low. I’ve been adding cubes to smoothies as I go along, but now I wonder if I’ve been doing my watermelon a disservice and maybe it should be the star attraction, holding the fort on its own!

    I could have really used a huge glass of this over the weekend- Man, was it ever hot! Not what I was expecting for late September at all.
