Vegan Red Velvet Cupcake From Sprinkles

I never got the whole concept of cupcake bakeries, probably because I wasn’t able to try any of them. But now that Sprinkles in Palo Alto has a vegan version of their red velvet cupcake, I just had to see what all the fuss is about.

Since I haven’t tried red velvet cupcakes or cake before (I know, I’m so deprived), I wasn’t even sure what exactly is red velvet. Sprinkles describes theirs as “Southern style light chocolate cake with cream cheese frosting.” The dairy is substituted with soy milk, tofu-based cream cheese and pure coconut oil.

After one bite, I gotta say, it’s divine – so moist and fluffy! Rich tasting with a beautiful red color and creamy frosting. The “V” on top is for vegan red velvet and is hard as a rock. I think it’s candy but I didn’t eat it as I was already floating around the room happy as can be on a sugar high.

Freshly baked, it’s everything you can ever desire in a cupcake. At $3.25 each, it’s well worth the price for the baking-impaired such as myself.

    I just made (twice) a vegan red velvet cake from The Vegan Table by Colleen Patrick-Goudreau which was so incredible no one guessed it was vegan. The frosting only creates a skim coat but is the perfect complement (the second time I made it I doubled this and it was a beautiful presentation but a bit too much sweet). It calls for red food coloring that I have not been able to find in a natural source so next time I’m going to use the water from cooked beets instead. Try it – it’s amazing!

    The cake certainly looks beautiful and velvety but (please don’t hit me) I never can stand to eat the frosting on cake beyond one or two small bites. I admit to not having had red velvet cake but I do have “The Vegan Table,” and am going to go look up the recipe right now.

    Ever since someone gave me a bite of this, I am just craving it. I wish I knew how to make this cupcake. This was the most moist cake I’ve ever eaten and felt like butterscotch pecans melting in my mouth.
