To kick off the unofficial start to summer, I pulled out a tub of CocoWhip, a dairy-free coconut milk whipped topping from So Delicious. Basically, it’s the vegan answer to Cool Whip. I had bought it for the first time late last year for the holidays but never got around to actually putting it on any pie. The tub has been living in the freezer ever since waiting for me to pair it up with something.
I suppose I could have just eaten it by the spoonful straight out of the tub. I did have one, albeit large, spoonful after thawing it out in the fridge, as a test, you know, to make sure it’s okay. It’s totally like how I remember Cool Whip as a kid.
Same texture and similar taste, although I don’t quite remember the exact taste of Cool Whip, it’s been so long. If anything the CocoWhip may be a bit more coconutty tasting. I do remember enjoying it with strawberries back then.
Now that strawberry season is hitting the farmer’s market, I combined the CocoWhip with another local market favorite, a Sweet Aha! vegan classic butter scone for a super easy dessert for the Memorial Day weekend. Now if I can only figure out how to keep the filling from squishing out as I’m eating…

Make your own from scratch! It’s easy! Put a can of full-fat coconut milk in the fridge overnight. The fat hardens. Next day open the can carefully and scoop out the cream avoiding the left over coconut liquid. Then beat it by hand or with a blender. Add a tiny bit of sugar if you must. So easy! I use this technique to make vegan tiramisu and other delicious vegan desserts!

I don’t think Cool Whip ever made it out this way, but that strawberry dessert does look divine. I’d definitely give the vegan Cool Whip a go!

I have to confess that I’ve never bought a tub of cool whip in my life, though I remember my mother-in-law making desserts with it at every family event. I haven’t bought the vegan version either, though I have made the coconut milk whipped topping. It was excellent, as I imagine the cocowhip must be! I was hoping you had a recipe for the scone — the texture looks amazing! Maybe you need to pick it up so you can both bite and lick. :D Or put it briefly in the freezer to firm up.

Oh yes, making dessert with Cool Whip was definitely a thing when I was little. The Sweet Aha! scones are the best with spot-on texture, it’s just easier to buy then for me to try to make them. I’ve resorted to eating with a fork. :-)

Mm, I really do love that stuff! It’s hard not to use it as a crutch in recipes now. It’s just so much easier (and more stable) than whipping straight coconut cream from the can.
I love seeing Sweet Aha get a shout-out here! Pei Ru is the absolute nicest person and deserves all the praise, and then some.
