Whole Foods Vegan Taquitos

It’s Cinco de Mayo. Once again I find myself running behind and totally unprepared for a holiday. But then I spotted vegan taquitos at the hot food bar in Whole Foods.

Whenever I feel like having taquitos, I usually bake up a batch of jackfruit carnitas taquitos at home as there’s no way I’m frying anything in my kitchen (I’m much too lazy to clean up the mess).

The Whole Foods taquitos are actually pretty good. I got them right around lunchtime so they were fresh and still kinda hot. Sure, they’re fried – that’s what makes them taste so good. I really don’t mind having a bit of fried food once in awhile. The key words being once in awhile. My body has no qualms about letting me know if I foolishly decide to eat more than a serving of fried at any one time.

I was going to make green chile potato enchiladas (the whole reason why I was in the store in the first place) but then laziness and taquitos took over…

    I do love greasy taquitos! I will have to try the baked versions so I can have them in my life a little more often.

    Yup, greasy is a treat but baked is everyday. :-)

    I’m kind of embarrassed to admit this, but I’m not familiar with taquitos! Clearly, from the pictures, I need to change this situation right now. I’m off to do some Googling, then some cooking!

    I don’t mind having the occasional fried food either — as long as I’m not the one who has to fry it. :)

    I’m afraid I’ve never had taquitos. :( I need to find a recipe and make some soon. They look like a delicious snack. And yes I do like a little fried stuff every once in a while though I don’t like how the kitchen stinks afterward. :P
    Btw, I cannot see a comment link for me to comment on the latest post (the vegan fish one).

      I’ve made baked taquitos before that are pretty good. I’ve forgotten about the smell from frying, another reason not to fry anything at home. Thanks for letting me know about being unable to comment on the latest post, somehow comments got turned off. :-)
