Vegan Cream Cheese and Coconut Bacon Bagel

Vegan Cream Cheese and Coconut Bacon Bagel

In the midst of the busy holidays, I managed to cook up a batch of coconut bacon for the first time. After trying a bag of Phoney Baloney’s Coconut Bacon, there’s no way my wallet was going to survive that addiction.

Especially not when it’s so easy to make at home. I actually made it while visiting at my parent’s house, everyone was wondering what I was making and why did it smell like bacon. Although all of the little kids came sniffing around, not one would touch the coconut bacon. The adults all liked sampling it but I don’t see anyone giving up regular bacon anytime soon. Oh well, more for me.

I used the recipe from Fettle Vegan but halved it as my parents have an extra small built-in wall oven. A full baking sheet pan doesn’t even fit, just a half sheet and there’s not much clearance on the sides. It’s a little like baking in a toy oven but with coconut bacon as the treat.

I have me a bad Phoney Baloney addiction!!! Those smoky flavours and crunchy, crisp texture are so good I sprinkle it on everything…or just pour it straight into my mouth. oh boy oh boy oh boy. Have you tried their Elvis sammie yet? Also, I’ve not tasted the Daiya cream cheese yet. Is it good? x

india leigh – me too, it’s why I tried making coconut bacon at home. No Elvis sammie yet but it sure does sound good. I was only able to find the Daiya cream cheese when I was visiting my parents down south. It’s good, so far I’ve just tried the chive and onion flavor.

Wow, I’ve never tried this bacon before but am so inspired to do so with your recipe. I just have to hunt down liquid smoke. This will be my next project. Thanks so much for your ideas.

I really should start making the bacon, too, because it can get costly. I really like the crunchy/salty taste and texture.

Coconut bacon cream cheese on a seeded bagel? It’s calling my name! A vegan friend sent me a bag of Phoney Baloney’s Coconut Bacon and I love it so much in my kale and pasta dishes! x Rika

Coconut bacon…on a bagel…? You are BRILLIANT!! For some reason, I went a really long time without enjoying bagels. I’m back, and with a vengeance, and you can bet I will be trying this!

Mmm! That looks like a good combo. I also love coconut bacon, but I haven’t settled on my favorite recipe yet. I’m going to bookmark the one you used. Thanks! :)

I’ve still yet to try coconut bacon, but I’ve heard so many people raving about the Phoney Baloney stuff it can’t be long til I crack and try to make some at home. Does it take long?

Thanks everyone for your comments. :-)

Amber – Thank you so much for your awesome recipe! It’s definitely a keeper!

Joey – It’s so good and it hardly takes any time to make. Prep is super easy and it only takes about 20 minutes or so to bake. But you have to stir every 5 minutes so it doesn’t burn.

That photo has my mouth watering! I know first hand the addictive power of coconut bacon, but I hadn’t thought to try it on the classic bagel with cream cheese. Now that could be a dangerous combination… Oh, I must throw caution to the wind and have one anyway!
