Sweet Potato Hash From The Get Healthy, Go Vegan Cookbook

After pigging out on donuts, I’m getting back on track with The Get Healthy, Go Vegan Cookbook by Dr. Neal Barnard and Robyn Webb. It’s the latest cookbook I’ve received for review from the publisher.

The first part of the book covers how a plant-based diet can improve your health and the science behind it. There’s also a section of inspiring stories of people reaping the many benefits of a vegan diet including weight loss, reversing diabetes and lowering cholesterol and high blood pressure.

The second part is a collection of simple, low-fat recipes and menu ideas using easy to find ingredients at the local run-of-the-mill supermarket.

Sweet Potato Hash From The Get Healthy, Go Vegan Cookbook

I really like breakfast potatoes. So imagine my delight to see a recipe for Sweet Potato Hash with Peppers. But since I have a deep aversion to bell peppers, I replaced them with fresh shiitake mushrooms.

I also threw in fresh chopped parsley at the last minute. Quite tasty and so colorful, it’s a nice change from regular white potatoes (nutritional information is also provided with all of the recipes).

To get you started on healthier eating or back on track, whatever the case may be, I’m giving away a copy of The Get Healthy, Go Vegan Cookbook.

    Oatmeal with cocoa powder and strawberries and blueberries will always be my favorite breakfast. It’s like a personal chocolate fountain in the morning!

    Already a follower and fan of Chow Vegan. :) I love your healthy recipe ideas and drool-inducing photos!

    Hmmmm… favorite breakfast food? I love having some fresh fruit (especially strawberries, pineapple, and watermelon) with soy yogurt for breakfast. I’m usually not too hungry when I wake up in the morning, but I do like some sugar to get my energy moving.

    Breakfast burritos! No eggs of course, but lots of potatoes, peppers, onions, black beans & green sauce. Tofu is good in the burrito ,too.

    My favorite breakfast food right now, is probably not going to be considered ‘breakfast’ food by anyone here, but I love chickpeas mixed with salsa eaten on rice cakes! I love all beans in general for breakfast!

    For the past 5 years or so, I’ve been eating oatmeal practically every morning. I can’t get enough of it! Recently I’ve been enjoying cold overnight oats with nut butter and fruit toppings. Looove it.

    I don’t usually get to eat breakfast in the morning, but I am a HUGE fan of breakfast for dinner. I love a good tofu scramble with tons of veggies thrown in it. So good!

    I make something similar for years now.. Who knew it was as healthy as they say!! Good for me… The say the best way to stay healthy is: EAT BREAKFAST LIKE A KING, LUNCH LIKE A PRINCE, DINNER LIKE A PAUPER….

    ALready a subscriber. My favorite brekfast food is the tofu scramble with sweet potatoes cut in small chunks with mushrooms, onions, bell peppers, and spinach served with a corn tortilla on the side and lots of cholula hot sauce. Yum!!

    My favorite not so healthy breakfast is the one I saw Paula Deen, the queen of butter, make on Food Network the other morning. She took her raw eggs (one could use egg whites or Egg Beaters), and beat them up with salt and pepper and added her favorite omelete veggies to the egg mix like diced mushrooms, onions and bell peppers and she added some cheese but that is certainly optional. She poured the egg mix into a heavy duty zip lock sandwich freezer baggie and zipped it close. She carefully squished the mixture up and then she dropped the baggie into a pot of gently boiling water and simmered for 8-10 minutes. When she took out the baggie, she had a perfecly formed omelete and she carefully dumped the omelete out of the baggie onto the plate. It looked great…..

    I’m alittle weird but the thing I like best for breakfast is leftovers. I really like having leftover dinner for breakfast the next day, even sometimes cold!

    I make a gluten-free, soy-free, added sugar-free, yeast-free loaf of bread each weekend, and I have toast every morning. My daughter calls it “shadow bread” in honor of the vegan episode of South Park. It is actually pretty good!

    Crispy bacon, and lots of it. Eggs over medium with a toasted salt bagel (the real NY kind), with lots of those little individual butter packs to slather it, and dip into the yolk of the egg. Bottomless coffee. It used to be my favorite, right next to a bacon egg and cheese sandwich on a kaiser roll, again, lots of butter (messy was important). Memories.

    Its a toss-up between tofu scramble, blueberry muffins, and frittata. I LOVE the frittata because my husband does it different every time based on what vegetables we have lying around.

    My favorite breakfast food would have to be Mexican tortilla wraps, filled with delicious scrambled tofu, beans, tomatoes, maybe even some avocado! It’s not for the faint of heart!

    I also used to love eggs benedict before becoming vegan, so I wish I could find a way to replicate that!

    A tofu scramble made with: tofu, artichoke hearts, oregano, black pepper, brewers yeast, turmeric! Also, a burrito made with whatever tickles-fancy!
