Seeing as I’m just as bad in math as I am in baking, the only way to really celebrate Pi Day (3/14) is to make the easiest kind of pie, no-bake Mini Raw Mixed Berries Cheesecake.

But it’s basically the same – baby broccoli, eggplant, mushrooms, sun-dried tomatoes, corn, and red onion. Get it with no cheese on their crispy thin crust.

    I agree that spelling ‘pi’ as ‘pie’ makes it a whole lot easier to calculate the results. Your pie choices all look great, but I’m especially interested in the chocolate galaxy banana cheesecake. Time to get out the mini-pie tins!

    Happy Belated Pi Day – ah I wish I made some savory pies that day, but had leftover Alfredo pasta instead! O golly these raw cheesecakes look mouthwatering esp that pizza! I haven’t had Daiya for a long time! Thanks for the info about the pizza name for California Pizza Kitchen – I didn’t know it had Japanese eggplants on it!
