Just in time for Halloween, rice krispy treats! I used the recipe from the cookbook, Simple Treats by Ellen Abraham, which I received from the publisher for review.
The brown rice krispy treats are a natural food version of the classic treat, using a concoction of various syrups to replace the usual marshmallows. I also added a topping of raisins and shredded coconut.
It’s been many moons since I’ve last eaten a rice krispy treat, but I thought these were good. They tasted a bit on the healthy side and aren’t super sweet. I haven’t tried making any with vegan marshmallows so I can’t compare the two.
The rest of the cookbook covers everything from muffins and breads to cookies and cakes to cremes, frostings and glazes, all dairy-free and wheat-free (but not gluten-free, as some recipes call for barley flour).

Those treats look good! Although I prefer them with regular puffed rice because they turn out crispier- too bad they’re not nearly as healthy!
My favorite Halloween treat is vegan mac’n’cheese served in a carved out sugar pumpkin. Actually, most anything served in a pumpkin is cool! :)

There’s also a pretty good rice krispies treat recipe in the cookbook “The Accidental Vegan”. It’s great to be able to indulge in these not typically vegan treats! I love that you topped your RK treats with raisins and coconut! Yum!

It’s amazing to me how many cookbooks and blogs are now giving us vegans access to all the sweets and savories we could want. It was a lot harder back in the late ’80s when I became vegan and had to make all this stuff up myself. It’s so much better now! In spite of all the yummy sweet Halloween treats there are, I think my favorite is still a bowl of salty popcorn.

Oh whoa, I’ve had some serious marshmallow cravings for awhile now so those brown rice krispy treats are pretty much killing me (even if they are made from a syrup combo rather than marshmallows…ah nostalgia). They look so delicious!
My favorite Halloween (or anytime) treats are homemade chocolate peanut butter cups. :)

I hope you don’t mind if I plug Simple Treats. As a vegan with a wheat intolerance, I’ve found it to be an extremely useful cookbook to have on hand. Not only are the recipes easy to follow, but they have also come out excellent 8 times out of ten. My only advice is (to those who, like I do, use spelt flour instead of the flour they recommend): HALVE THE BAKING SODA AND BAKING POWDER AMOUNTS. If you don’t, the recipe will come out tasting like baking soda / powder.
